Butter biscuits

Makes approx 16 biscuits


  • 1 cup cashews
  • 1 cup flaked almonds
  • Vanilla essence 6 drops
  • 2 tablespoons solid white cacao butter
  • 6 soaked dates
  • Generous pinch mineral rich salt


Pre-heat oven to 150C. Place the cashews and almonds into a food processor and pulse until you get a flour like texture. Gently melt the cacao butter and add to the processor as well as the vanilla essence, salt and the dates (with water removed). Process until you get a dough like texture. Remove from processor and with a rolling pin roll to get a 1/2 cm thickness. Either cut into squares of 5x5cm or use a cookie cutter of your choice. Place on a baking tray lined with parchment paper and bake for 10 mins on either side. Remove from the oven and allow to cool before enjoying.
