Makes approximately 18 cookies


  • 1/3 cup ground flaxseed
  • 1 cup almonds
  • ½ cup walnuts
  • 2 ½ teaspoons cinnamon
  • 2 ½ teaspoons ground ginger
  • 1 small chunk cocoa butter
  • Pinch Himalayan salt
  • 8 dates
  • 4-6 tablespoons water

Place all ingredients into a food processor (optional berries) except the water and then add in gradually to help bind until you get a dough like texture. Remove from the machine and roll flat to about ¼ inch thickness. Cut with star shaped cutters (or other festive shapes). Place either into a low oven at 50°C for 1 hour or a dehydrator at 46°C for 4 hours. You can also top these with a nut based frosting if you like or just enjoy simply on their own.
