Makes one loaf
- 3 ripe bananas
- 1/2 cup coconut flour
- 1/4 cup ground almonds
- 1/4 cup flaked almonds
- 1 tablespoon matcha
- 6 drops vanilla essence
- 1 tablespoon baking soda
- 1 tablespoon ground flax with 3 tablespoons water (left to set for 5 minutes)
- 1/2 cup unsweetened almond milk
- 3 tablespoons almond nut butter
- Pinch mineral rich salt
Pre-heat the oven to 350F/175°C.
In a large bowl mash the bananas throughly and add the nut butter, flax mix, almond milk and vanilla essence and mix well. In a separate medium size bowl sieve the coconut flour and add the ground almonds, flaked almonds, baking soda, matcha and salt and stir well. Add this dry mixture to the banana mix and combine throughly.
Lightly grease a 7 inch loaf pan with coconut oil and scoop the mixture into pan spreading evenly.
Bake for 50 minutes and serve with almond butter, matcha coconut cream (see the other recipe on the website) or slices of banana.
