Pumpkin Spice Porridge

Serves one

INGREDIENTS

  • 50g oats (I used sprouted oats from RUDE HEALTH)
  • 1/2 teaspoons pumpkin spice mix
  • 2 tablespoons pumpkin butter
  • 150ml water
  • 50ml oat milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon maple syrup (plus a little extra to drizzle)
  • 1 tablespoon pecan nuts roughly chopped
  • 1 teaspoon pumpkin seeds

METHOD

Add the oats, spice mix, 1 tablespoon of the pumpkin butter, water, milk, vanilla extract and maple syrup to a small saucepan and heat very gently on low for around 5 mins. Spoon into a bowl and serve with a tablespoon more of the pumpkin butter, pecans, pumpkin seeds and add another drizzle of maple to finish.
