- 80ml chamomile tea (ideally using flowers) steeped and strained and fully cooled – TIP: get the flowers from your local health food store or at Neil’s Yard stores
- 50ml gin
- Juice of 1/2 fresh lemon
- 1 teaspoon raw/local honey
- Prosecco (approx 125ml)
- Edible flowers to garnish (optional)
Place the cold tea, gin, lemon and honey and a couple cubes of ice into a cocktail shaker. Mix and divide between two champagne flutes. Top with the Prosecco divided between the two glasses. Garnish with edible flowers if using!
